Apple Blueberry Galette

A rustic pastry filled with sweet apples and tart blueberries is a perfect dessert.

This recipe is a couple years old, I made it at my cabin in the summertime. Apples and blueberries are not a common combination, at least I had never paired them together and it was a massive success! The cabin is one of my favourite places to cook, lots of BBQ and rustic desserts to share will my family.

Apple Blueberries Galette
Ingredients:
– 4 3/4 cup sliced apples and blueberries
– 1/3 cup granulated sugar
– 1 teaspoon fresh lemon juice
– 3/4 teaspoon coarse salt
– 1 tablespoon cornstarch
– 2 teaspoons cinnamon
– 1 disk Pâté Brisée (pie dough)
– All purpose flour, for rolling surface
– 1 large egg, lightly beaten
– Sanding sugar for sprinkling
Instructions:
1. Preheat oven to 350F. Line a rimmed baking sheet with foil, then parchment.
2. Stir together fruit, sugar, lemon juice, salt, cornstarch and cinnamon.
3. Roll out pâte Brisée into a 13 inch round, about 1/8 inch thick, on a lightly floured surface.
4. Transfer to baking sheet, arrange fruit in center, leaving a 2 inch border. Fold over border to enclose fruit, leaving center open. 5. Brush crust with egg and sprinkle with sanding sugar.
6. Bake until golden brown and bubbling in the center, about an hour ( I set a timer for 30 minutes, then 15 minutes and then another 15 minutes… If it’s starts getting a darker brown it’s done!)
7. Let it cool on the baking sheet for 10 minutes, then slide the galette on parchment onto wire rack to finish cooling. 8. Serve on its own or with vanilla ice cream.

Rustic and delicious, not near as tricky as forming a pie you can use any fruit combo you want.
