Bananas Foster Waffles

Brunch is truly the best meal of the day or at least it’s my favourite. Bananas, boozy caramel and waffles, how can you go wrong?

You are either a savoury breakfast person or a sweet breakfast person, but if you are lucky you enjoy both and savoury. I have many plans to add recipes for both because like I said brunch is my favourite.
Bananas foster is such a delicious caramel based sauce that combines the flavours of cinnamon, bananas and a nice splash of rum. This recipe was the first time I’ve flam bayed anything and thankfully no one was harmed in the process.

My only quarantine purchase has been a waffle iron and I was very happy to break it in today. I’m on the hunt to perfect the best Belgium waffle. The recipe I did today was pretty good, I’m looking for a little bit more colour and fluffy center for my next try!

Bananas Foster Waffles
makes 8 servings
Ingredients:
For Waffles
- 4 cups all purpose flour
- 4 tablespoons white sugar
- 6 teaspoons baking powder
- 1 teaspoon sea salt
- 4 eggs, separated
- 2 teaspoons vanilla extract
- 3 cups coconut milk, unsweetened
- 1/2 cup butter, melted
For Bananas Foster sauce
- 1/2 cup butter
- 1 cup brown sugar
- 1/2 teaspoon cinnamon
- 1/4 teaspoon sea salt
- 4 bananas, in the greener side (helps them not turn to mush when cooking)
- 1/4 cup spiced rum
Instructions:
1. Separate eggs, beat egg whites until frothy and stiff.
2. In a large mixing bowl, whisk together dry ingredients including flour, sugar, baking powder and sea salt.
3. In a medium mixing bowl whisk together, egg yolks, milk, vanilla and melted butter. Add wet ingredients to dry and mix until just combine.
4. Fold egg whites into mix.
5. Spray warmed waffle iron with cooking spray and cook waffles until golden brown. Around 5 minutes a waffle. Preheat oven to 200F to keep waffles warm.
6. For your sauce melt butter in a medium sized frying pan, once butter is melted whisk in brown sugar, cinnamon and salt.
7. Whisk while cooking until sauce is smooth, about 5 minutes.
8. Peel and chop bananas, add them to the warm sauce.
9. Gently fold the bananas into sauce so they don‘t get mushy, cook until softened (about 3 minutes).
10. Remove frying pan from heat and add rum, light it on fire using a wand lighter.
11. When flames subside spoon warm banana sauce over your warm waffles.




Yuuummmm! Sticky caramel goodness. But don’t worry you still got a little fruit in there! Haha.
