Broccoli and Kale Salad

Another killer kale salad. My goal is to change everyone’s mind about kale! It’s delicious and nutritious. Add in crunchy broccoli, nutty sunflower seeds and almonds, sweet dried cranberries and salty feta and you have one delicious salad.

I’ve made this salad twice now and I love it. Kale is definitely my MVP this spring and summer!

Broccoli and Kale Salad
Ingredients:
For Salad
- 5 cups kale, chopped and massaged with lemon juice
- 2 cups broccoli, chopped
- 1/2 cup sliced almonds
- 1/2 cup feta, crumbled
- 1/2 cup shredded carrots
- 1/4 cup red onion, diced
- 1/4 cup sunflower seeds
- 1/4 cup dried cranberries For dressing
- 1/4 cup olive oil
- 2 tablespoons lemon juice, fresh
- 2 tablespoons red wine vinegar
- 1 tablespoon Dijon mustard
- 2 cloves garlic, minced
- 1/2 teaspoon dried oregano
- 1/4 teaspoon sea salt
- pinch of black pepper
- 1 teaspoon honey
Instructions:
1. In a large bowl add 2 teaspoon of lemon juice and massage for 3 minutes, or until kale is a bright green.
2. Combine all dressing ingredients in mason jar and shake until well combined.
3. Add the remaining salad ingredients to the large bowl with kale. Pour about a 1/3 of the dressing over the salad and toss.


Summer is all about getting together with friends and families and eating great food. Even though we are all social distancing and can’t always see our friends and families you can still make some great food!
