Chicken & Veggie Soup with Kale

When you have a snow day what’s better than making a new soup? Why not try something different like adding new spices or ingredients? Thats where my inspiration came for this Chicken & Veggie Soup with Kale.

In Saskatchewan I can’t remember the last time we actually had a snow day. Growing up we had days with crazy snow drifts but we will managed to make it to school or work. This past weekend many parts of Saskatchewan including Saskatoon got a crazy blizzard which left lots of the city stuck at home. After a solid 3 hours of shoveling my sidewalks, backyard and driveway I was in need of something warm, what’s better than soup?




I have seen so many recipes that use kale in soup and I was always interested in how it would taste and if it would become too mushy, but not only was it a delicious addition to the soup but it held up its structure even after reheating the soup the next day.
I used thyme, rosemary and basil to seasoning the soup and it tasted just like fall.
Chicken & Veggie Soup with Kale
Ingredients:
- 1 tablespoon olive oil
- 1 medium yellow onion, chopped
- 3 cups carrot, chopped
- 2 cups celery, chopped
- 2 cups mushrooms, sliced
- 4 garlic cloves, minced
- 8 cups chicken broth, reduced sodium
- 2 cups chicken breast, cooked and chopped
- 3/4 teaspoon ground thyme
- 1/2 teaspoon dried rosemary
- 3/4 teaspoon dried basil
- 1/2 teaspoon sea salt
- 1/2 teaspoon black pepper
- 2 cups kale, roughly chopped
Instructions:
In a large pot heat olive oil on medium high, add onion and cook until soft and fragrant. Add minced garlic and cook for 1 minute. Add carrots and celery and cover the pot, let cook for about 5 minutes. Add mushrooms and cover pot again, cook for 5 minutes. Add spices and cook for 1 minute.
Pour chicken broth and chopped chicken. Bring soup to a gentle boil and stir in kale. Reduce heat and cover pot with lid. Cook for 3-5 minute. And serve.
What I’m learning with making soup is that it’s fun to try out new flavours and ingredients and it’s so easy to make them taste great!
