Cinnamon Apple Swirl Bread

Apples and cinnamon... yum! Why not make this killer combo into a loaf, perfect for any occasion.

Loaves are one of my favourite things to bake because they remind me of my grandma Audrey, she made the best loaves. Banana, coffee cake, lemon and my personal favourite gumdrop loaf. She also made the best apple pie, here is a loaf that combines both! This recipe would definitely be popular with my dad and his brothers.

Cinnamon Apple Swirl Bread


Ingredients:


- 2/3 cup white sugar

- 1/2 cup butter, softened

- 2 eggs

- 2 teaspoons vanilla

- 1 1/2 cups all purpose flour

- 1 1/2 teaspoons baking powder

- 1/2 cup coconut milk

- 1 large apple, peeled and chopped

- 1/2 cup golden brown sugar

- 1 1/2 teaspoons ground cinnamon


Instructions:


1. Preheat oven roasted 350F. Grease and flour a 9x5 loaf pan.

2. Using a stand mixer, combine white sugar and butter until smooth. Add eggs and vanilla, continue to beat on medium speed until combined.

3. Add flour and baking powder, mix until almost combined then add milk.

4. Pour half of batter into your pan. Cover with half of the apples. Mix brown sugar and cinnamon and then sprinkle half of mixture into loaf. 5. Pout remaining batter over apple/sugar layer. Top with remaining apples and add the rest of the brown sugar/cinnamon mixture.

6. Pat topping into the batter with the back of a large spoon.

7. Bake for 50 minutes or until a toothpick inserted into the loaf comes out clean.

8. Cool in pan for 10 minutes then transfer to a wire cooling rack.


Serve with butter or on its own.
