Coffee Cake Banana Loaf

Combing two of the best loaves into this one hybrid loaf was such a great idea. Coffee cake and banana bread make this recipes an instant family favourite.

With this recipe you can make one giant loaf or two smaller loaves. I used a 9x5 loaf pan or you could use two 8x4 pans.

What‘a better than a crisp, crumbly topping on a classic banana loaf?

Coffee Cake Banana Loaf


Ingredients:

For banana loaf

- 4 medium to large bananas

- 2 tablespoons brown sugar

- 1 1/2 teaspoons vanilla extract

- 1 cup white sugar

- 1/2 cup butter, melted

- 2 eggs

- 2 tablespoons plain green yogurt

- 2 cups all purpose flour

- 1 teaspoon baking soda

- 3/4 teaspoon cinnamon

- 1/2 teaspoon sea salt

For crumb topping

- 1 teaspoon cinnamon

- 1 cup flour

- 1 cup brown sugar

- 6 tablespoons butter, cold


Instructions:


1. Preheat the oven to 350F. Grease and flour one 9x5 or two 8x4 loaf pans. ( if using one pan just a warning this makes a very large loaf, may need tray under loaf incase of crumbs falling.

2. In a medium bowl, mash bananas. Add brown sugar, white sugar, vanilla, eggs, yogurt and melted butter

3. In a large bowl combine flour, cinnamon, baking soda and salt.

4. Add wet ingredients into dry and mix until combined. Don’t over mix.

5. To make crumble; combine cinnamon, flour, brown sugar. Cut in butter with a pastry cutter, I usually just use my hands, mix until topping looks like course crumbs. 6. Place half banana batter into greased pan, sprinkle half crumble mixture. Spread remaining half of banana batter onto crumble layer. Top the loaf with remaining crumble.

7. Bake for 50-60 minutes or until toothpick inserted in the middle comes out clean.

8. Allow to cool for 15 minutes, move to a wire rack to finish cooling.


Serve warm with butter or in its own.
