Dill Pickle Pasta Salad

Who doesn’t love dill pickles? Who doesn’t love a good pasta salad? I’m a huge fan of this salad, it was the best edition to some bbq meals I made for the family this summer.

My dad makes the best pasta salad with pickles, cheese, green onions and ham. It always a big crowd pleaser but I am not a fan of the ham in it so I thought why not try something different? This recipe was so delicious and is the perfect side for any summer gathering.
I removed the ham, traded green onion for white and used a much dillier salad dressing. I used spiral pasta because I like the look of it but regular elbows or shells would work also.


Dill Pickle Pasta Salad
Ingredients:
3 cups dried spiral pasta
3/4 cup dill pickles, diced
2/3 cup cheddar cheese, diced
3 tablespoons white onion, finely diced
2 tablespoons fresh dill, chopped
Dressing
2/3 cup olive oil mayonnaise
1/3 cup sour cream
1/3 cup pickle juice
1 teaspoon Dijon mustard
1 teaspoon white sugar
1/8 teaspoon cayenne pepper
salt and pepper to taste
Instructions:
Boil pasta until al dente. Drain pasta and run under cold water to stop it from cooking further.
Combine all salad ingredients in large bowl and set aside.
Combine all dressing ingredients in a small bowl and mix well.
Pour dressing over top of salad and mix until well combined. Cover with plastic wrap and place in fridge for at least 1 hour before serving.


Best salad to bring with you to any potluck or gathering. During covid you may not be able to get together with too many people but your family will still love this salad!
