Frozen Peach Bellini

Peach Bellinis are a summertime staple, well let’s me honest it’s a year round staple!

Almost every patio season is made better with a frozen peach Bellini and when you see one on the menu it’s hard not to order it. In this recipe I use store bought frozen peaches but come August when peaches are in season I will definitely be making a stop to a BC fruit truck for the most amazing peaches. For now store bought works great!

Frozen Peach Bellini
makes 2 large bellinis
Ingredients:
600g bag of frozen peaches
1 cup crushed ice
375ml peach schnapps (a Mickey)
1 ounce champagne or sparkling wine
a splash of raspberry liquor - I used Sourpuss
Instructions:
In a blender combine frozen peaches, ice and peach schnapps. Pulse first to crush ice and peaches then blend on high until mixture is nice and smooth, about 3 minutes.
Pour mixture into two large glasses, top each with champagne and raspberry liquor. Garnish with a peach slice.

I am making this recipe again this weekend at the cabin and I’m already counting down the days until my holiday starts.
Frozen drinks are always a highlight of summer and one of the best ways to stay cool on those hot afternoons. Can’t wait time share these with my family at the cabin!
