Heart Shaped Eggs Benedict

Valentine's Day is right around the corner and breakfast in bed is always a good idea, whether it's for your valentine or for yourself! Add in a quick and easy blender Hollandaise sauce you are sure to please!

I have been on a Benedict kick for several months now since I went to OEB for brunch with my girlfriends. Its a hard breakfast to beat; eggs cooked just right, salty Canadian bacon and drizzled with buttery tart hollandaise sauce, who wouldn't be obsessed with that. I prefer to use Canadian bacon over ham because its obviously the best, but the joy of Benedict is you can choose whatever speaks to you.




I tested out putting all my hollandaise ingredients into a mason jar and using my immersion blender and was able to create a beautifully silky sauce. The trick is to slowly pour your butter as you blend, this way you can make sure the emulsification doesn't break. It was ready in 5 minutes and trust me this blender method is WAY easier to master than the whisking method.

Heart Shaped Eggs Benedict
serves 3
Ingredients:
Eggs Benedict
- 6 eggs - poached in a heart shaped cookie cutter, if you want to get fancy.
- 6 slices of Canadian bacon
- 3 English muffins, sourdough
- 2 tablespoons hollandaise sauce
- chopped chives and paprika to garnish
Hollandaise Sauce
- 3 egg yolks
- 2 tablespoons fresh lemon juice
- 1 teaspoon Dijon mustard
- pinch of cayenne pepper
- pinch of salt
- 1/2 cup butter, melted
Instructions:
Eggs Benedict
In a shallow pan bring to boil 1/2 cup water on medium heat. Place heart shaped cookie cutters in center of pan and pour one egg into each cookie cutter. I recommend cracking the egg into a small bowl first then pouring into the cookie cutter. Cover the pan and cook for about 6-8 minutes depending on how you like your yolks. Second option for poaching eggs which allows you to cook all six eggs at once is; using a muffin tin with 1 tablespoon of water in 6 of the holes, crack one egg in each hole then cook in a 350F preheated oven for 10 minutes.
In a separate frying pan fry two piece of Canadian bacon. Pop two halves of English muffin into toaster and toast.
Prepare hollandaise sauce.
To plate your eggs Benedict, place your English muffin down, top with Canadian bacon, poached egg and hollandaise sauce. Garnish with chives and paprika.
Blender Hollandaise sauce
In a mason jar combine egg yolks, lemon juice, dijon mustard, cayenne pepper and salt. Using an immersion blender, blend until combined.
Slowly while immersion blender is on high pour in melted butter, over the course of about 45 seconds. Blend until completely emulsified. If sauce is not runny enough add 1 teaspoon of hot water. Consistency should be similar to lava flowing.
One hell of a way to appreciate the one/ones you love! Even your kids won't be able to stop eating this hollandaise sauce!
