Holiday Snickerdoodle

Take a basic white cookie dough and add a little spice, for the holidays I like to add a pop of colour as well. These holiday Snickerdoodles are an easy and festive looking cookie.

My mom is the queen of Christmas baking and my love of Christmas baking definitely came from her. So many of my recipes are inspired by cookies she has made in the past years for Christmas. One of the best gifts you can give this time of year is a delicious tray of baking and my mom has been doing that forever!



This recipe is quick and easy, with a sprinkle of cinnamon to flavour the dough and then rolling the dough in a sugar and cinnamon mix leaves you with beautiful Christmas cookies.

Holiday Snickerdoodles
Ingredients:
- 1/2 cup butter, softened
- 1/2 cup shortening, I use crisco
- 3/4 cup white sugar
- 1/4 cup brown sugar
- 2 eggs
- 1 teaspoon vanilla
- 1 teaspoon baking soda
- 1 teaspoon cream of tartar
- 1 teaspoon cinnamon
- 1/2 teaspoon salt
- 2 3/4 cups all purpose flour
- 1 tablespoon cinnamon
- 1/2 cup coarse red sugar
Instructions:
Preheat oven to 325F and line two cookie sheets with parchment paper.
In the bowl of a stand mixer fitted with a paddle attachment combine butter, shortening, white sugar and brown sugar, mix on medium speed until creamy and fluffy.
Add eggs and vanilla to mixture and mix until fully incorporated. In a separate bowl combine baking soda, cream of tarter, cinnamon, salt and flour. Pour dry mixture into wet and mix until dough is just combined.
Using a small cookie scoop, scoop out each cookie ball, using your hands roll each into a smooth ball. In a small bowl combine cinnamon and coarse red sugar, roll each cookie dough ball into mixture until it’s coated in the sugar/cinnamon.
Place cookies on prepared pans and bake in preheated oven for 10 minutes. Removed pan from oven and let the cookies cool on warm pan for another 5 minutes. Finish cooling on wire rack.

Like all my holiday baking these cookies freeze very well for 2-3 months in an airtight container.
