Homemade Chips and Guacamole

Happy Cinco De Mayo! I have a couple recipes to post for today but let’s start with a snack! Chips and guacamole is the perfect way to start a Cinco De Mayo celebrations.

It’s super easy to make this snack, the chips take less than 20 minutes and the guacamole is done in minutes!
All you need to make homemade corn chips is corn tortillas, olive oil, lime juice and salt, so easy. You can also just buy chips haha but I like trying new recipes!




Homemade Chips and Guacamole
Ingredients:
For chips
- 15 corn tortillas
- 2 tablespoons olive oil + extra for cookie sheets
- 1 tablespoon lime juice
- sea salt
For guacamole
- 2 avocados, mashed up
- 1/4 cup purple onion, chopped finely
- 2 cloves garlic, minced
- 1/4 cup red pepper, chopped finely
- 2 tablespoons fresh cilantro, chopped
- 1 tablespoon lime juice
- 1 teaspoon sea salt
- 1/4 teaspoon black pepper
Instructions:
1. Preheat oven to 375F. Brush two large cookie sheets with olive oil
2. Mix together olive oil and lime juice in a small bowl. Brush oil on one tortilla, cover the entire surface, stack another tortilla and top and brush on oil mixture. Continue until you have 1/2 of your tortillas in a stack, make another stack with remaining tortillas. Cut tortillas in half, cut each half into 3 small triangles.
3. Arrange tortilla pieces onto greased cookie sheet in a single layer. Sprinkle sea salt over all tortilla pieces. 4. Bake in oven for about 10-12 minutes, or until chips are golden.
5. While chips are baking combine all guacamole ingredients in a medium bowl and mix until well combined. Cover with plastic wrap and place in fridge until serving. Guacamole is best served fresh.
6. Remove chips from oven and let cool completely before serving with your guacamole. Chips should be kept in an airtight container and will be crunchy for 1-2 weeks.



One of my favourite appetizers and so quick to make. Best snack for my solo Cinco De Mayo celebration, social distancing style... haha.
