Honey Dijon Chicken Salad

Spring time is here and with spring comes more and more salads! This salad was a definitely a win. A quick and easy marinade and dressing made in one, pairing that with bacon, avocado and tomatoes made one delicious bite.

I love when the weather warms up and the sun stays up longer each day once spring is in full swing. We also start to eat lighter now that the temperature is warmer, our minds mentally think we no longer need to eat heavy to stay warm during our long winter. With Springtime comes lots of veggies and fruits coming into season, strawberries start to look bigger, redder and juicier, asparagus looks bright green and fresh and lettuce greens start to be available from small farmers markets.
This salad felt like the perfect salad to kick off a season of salads, it has the comforts of bacon and avocado but paired with fresh veggies like cherry tomatoes and red onion. The marinade for the chicken is also used as the vinaigrette and packs a delicious honey dijon flavour.


Honey Dijon Chicken Salad
makes 2 salads
Ingredients:
For marinade/vinaigrette - Use half for marinade and half for vinaigrette
- 1/3 cup honey
- 3 tablespoons whole grain mustard
- 2 tablespoons smooth and mild Dijon mustard
- 2 tablespoons olive oil
- 2 tablespoons Apple cider vinegar
- 1 teaspoon minced garlic
- Salt and pepper to season
For salad:
- 2 Chicken breast
- 4 cups romaine lettuce
- 1 1/2 cups arugula
- 1 avocado, sliced
- 1/3 cup red onion, sliced
- 1/2 cup cherry tomatoes, sliced in half
- 1/3 cup bacon, cooked and chopped
Instructions:
Combine all marinade ingredients in a bowl and whisk until fully emulsified. Place two chicken breast in a glass container and pour half of the marinade in the container, place in fridge and let marinade for 3 hours or overnight. Save the rest of marinade for vinaigrette.
Once chicken has marinaded cook in a hot pan on medium high heat, about 14-15 minutes, flipping the chicken over every 5 minutes to brown both sides. Slice your cooked chicken into nice even pieces.
In a flat bowl place a bed of romaine lettuce and arugula, on top of the lettuce you can then add the cherry tomatoes, red onion, avocado, sliced chicken and bacon. Drizzle the salad with the vinaigrette that was set aside and serve!


I for one after the past year need to hop on the salad train and run with it! Luckily your salads don't have to sacrifice on flavour just to be healthy.
