Monster Cookie Brownies

Do I make cookies or brownies? well with this recipe you get the best of both worlds, dark fudge brownies and peanut buttery monster cookies. My new twist on two old favourite recipes.

Whenever I ask my niece and nephew what they would like to bake with me my nephew always requests brownies but my niece always wants to make cookies, so why not make both? I love making a brownie using darker chocolate and black cocoa powder, it really makes the brownies rich and super chocolatey which is what you want in a brownie. Monster cookies are one of my favourite cookies and one that I have never made before. I love that it's basically a cookie where you throw everything but the kitchen sink in; oats, chocolate chips, m&ms, and peanut butter, how can you go wrong!

When baking brownies you have the power to cook then to whatever style you like, bake for the exact time given in this recipe and you will have slightly fudgy on the inside. Take 3 minutes away and they are gooey and more fudgy and add 3 minutes to the time they are a well baked brownie but not over done. Personally I do love a gooey centre to my brownie but with this recipe I added a couple minutes to the cook time to have a little more stability for the cookie dough.

Start this recipe by making your brownie dough and then cookie dough. I always line my baking pan with parchment when making brownies, it helps them come out clean every time. I had some left over dough so I also make some brownie stuffed monster cookie, never waste leftover dough!

Monster Cookie Brownies


Ingredient:


For Brownie dough:

- 4 ounces semisweet chocolate, melted

- 1/2 cup butter, melted

- 1/2 cup brown sugar

- 1/2 cup white sugar

- 3 eggs

- 1 teaspoon vanilla extract

- 3/4 cup all purpose flour

- 1/4 cup black cocoa

- 1/4 cup regular cocoa

- 1/2 teaspoon baking powder

-1/4 teaspoon salt

- 1/2 cup semisweet chocolate chips


For Monster cookie dough:

- 1/3 cup butter, softened

- 1/2 cup crunchy peanut butter

- 1/3 cup white sugar

- 1/3 cup brown sugar

- 2 eggs

- 1 teaspoon vanilla extract

- 1 1/2 cups all purpose flour

- 1/2 teaspoon baking powder

- 1/4 teaspoon salt

- 1 cup oats

- 1/3 cup semisweet chocolate chips

- 1/2 cup mini m&ms, extra for topping


Instructions:


For Brownies:

  1. Preheat oven to 350F, line an 9 inch square pan with parchment paper and spray with cooking spray.

  2. In a large bowl mix together melted chocolate and butter using a whisk, stir in sugars until well combined. Add vanilla extract and eggs.

  3. In a separate bowl combine cocoas, flour, baking powder and salt. Add dry ingredients into wet and mix using a wooden spoon until just combined, don't over mix. Stir in chocolate chips and pour brownie mix into prepared pan.

For Monster Cookie dough:

  1. In a large bowl of a stand mixer fitted with the paddle attachment combine butter, peanut butter and sugars. Mix until light and fluffy, about 2 minutes. Mix in eggs one at a time and vanilla extract.

  2. In a medium bowl combine flour, oats, baking powder and salt. Add dry ingredients into wet and mix until just combine. Using a wooden spoon mix in chocolate chips and m&ms.

  3. Using a cookie scoop, press several cookie dough balls into brownie batter. Make smaller bits of cookie dough and fill in spaces in your brownie batter.

  4. Place brownies in preheated oven and bake for 32-35 minutes until centre of brownie just slightly jiggles. Let cool in pan completely before transferring to a wire rack. Slice and serve!
