Peanut Butter Cup Cookies

A peanut butter cookie is so delicious on its own but throw a mini Reese peanut butter cup in the middle and it’s twice and delicious!

Peanut butter and chocolate a match made in heaven, making these cookies heavenly. Using crunchy peanut butter is my favourite way to make these cookies because it adds that extra little crunch from the peanuts. These cookies are meant to be slightly under baked to keep them soft and chewy.

Christmas baking is in full swing and these yummy cookies are just number 2 on my list of about 10 recipes to add so get ready for tons of baking for the holidays! This recipe is so fun and easy to make, I highly recommend asking your kids to join in on the fun!

Peanut Butter Cup Cookies

Ingredients:

- 1/2 cup salted butter, softened

- 3/4 cup crunchy peanut butter

- 1/2 cup brown sugar

- 1/2 cup white sugar

- 1 egg

- 1 teaspoon pure vanilla

- 1 1/2 cup all purpose flour

- 1/2 teaspoon baking soda

- 1/4 teaspoon sea salt

- 1/3 cup white sugar for rolling

- mini Reese’s peanut butter cups - I used about 25

- dark chocolate, melted for drizzle


Instructions:

  1. Preheat oven to 350F, line two large cookie sheets with parchment paper and set aside.

  2. In an electric stand mixer fitted with a paddle attachment combine butter, peanut butter, brown and white sugar until fluffy, about 2 minutes. Add egg and vanilla and mix until combine.

  3. Sift in flour, baking soda and sea salt and mix until fully combine, don’t over mix.

  4. Using a small cookie scoop scoop out equal chunks of dough, using your hands roll each chunk into a smooth ball and roll in sugar to completely coat each cookie ball. Place on parchment then bake in oven for 10-12 minutes, until edges start to slightly golden.

  5. Remove cookies from oven and immediately place mini peanut butter cup into the center and gently press down. Allow to cool on pan for 3 minutes then remove to wire rack to cool completely.

  6. Melt dark chocolate in a bowl and using a spoon slowly drizzle each cookie with some chocolate.


Yummm! Peanut butter and chocolate, you can’t go wrong. Quick and easy to make is what makes this recipe so awesome!
