Pumpkin Spice Creme Brûlée

Take a classic dessert and sprinkle in the best flavours of fall and you have the perfect Thanksgiving dessert.

Creme brûlée is a smooth and creamy dessert topped with a thin, crunchy caramelized shell. With the crack of a spoon on top you get excited to dig in to such an indulgent treat. By adding pumpkin and spices it easily becomes a dessert fit for a thanksgiving feast.

I found these adorable pumpkin ramekins at Michaels and thought they would be the perfect way to serve this recipe.


Baking note; It’s very important to use pure pumpkin puree and not pumpkin pie filling.


Pumpkin Spice Creme Brûlée


Makes 4 Creme Brûlée

Ingredients:


- 2 cups heavy cream

- 1/2 teaspoon vanilla extract

- 3 egg yolks

- 1/4 cup white sugar

- 1/4 cup pumpkin

- 1/4 teaspoon ground cinnamon

- 1/8 teaspoon ground ginger

- dash of nutmeg

- dash of cloves


Instructions:

  1. Preheat oven to 325F. Set 4 ramekins in a 9x13 cake pan.

  2. In a medium pot heat the heavy cream and vanilla extract on medium high heat until it starts to boil, remove from heat and let sit for 5 minutes.

  3. In a medium bowl whisk together egg yolks and white sugar until mixture is light yellow in colour.

  4. Whisk in pumpkin and spices until combined.

  5. While constantly whisking Add about 1/3 of the warm cream. Make sure you are whisking the whole time to prevent the egg from cooking and creating lumps. This is called tempering the eggs. Once you have mixed it in slowly pour the remaining cream in while whisking.

  6. Fill each ramekin with cream mixture. Fill a 9x13 cake pan with hot water until it reaches 1/2 way up the ramekins to create a water bath.

  7. Place in oven and bake for 43-45 minutes until pudding is set and slightly jiggles. Remove from pan and let cool completely.

  8. Place creme brûlées in fridge for at least 2 hours to fully set.

  9. Once set sprinkle 1 tablespoon of sugar on top of each pudding and evenly spread out. Using your kitchen torch melt sugar by moving the torch in small circular motions. Melt until caramelized, let rest for 5 minutes before serving.

Then comes the fun part, grab a spoon and crack that top open!
