Raspberry Mint Champagne Cocktail

Whats the best way to start off a new year? Champagne of course! Whether you pop a bottle at midnight or you have a lovely New Years brunch this champagne cocktail is definitely something to celebrate!

I love champagne, something about the bubbles just makes you feel happy. After a year like 2020 everyone could use a strong cocktail and this one is just that, raspberries muddled with mint add a delicious flavour to compliment the crisp finish of the champagne.

You can use any brand of champagne, from the expensive to the more budget friendly, and if you aren't a fan of champagne a sparkling wine or Prosecco would do just fine as well. To add some colour to this cocktail I soaked frozen raspberries in raspberry flavoured vodka for about 2 days, a mason jar stored in the fridge worked perfect here.

Raspberry Mint Champagne Cocktail


Ingredients:

- 2 ounces Raspberry Vodka, infused with raspberries (for colour)

- 6 large mint leaves

- 6 fresh raspberries

- 1 ounce raspberry juice (optional)

- Champagne


Instructions:

  1. In a liquid measuring cup muddle the raspberries, mint leaves and raspberry juice until mint is fragrant. Pour evenly between two champagne flutes.

  2. Pour one ounce of raspberry vodka into each flute and mix.

  3. Top off each flute with champagne, pour slowly. For some added decor drop in two fresh raspberries and a sprig of mint to top of cocktail.
