Roasted Greek Drumsticks

Who doesn't love greek food? This drumstick recipe combines all the great flavours of herbs, lemon juice and garlic for this marinade that roast so beautifully in the oven to make one great bite.

This chicken recipe was part of an entire greek feast, I made my homemade naan bread and Tzatziki from the blog and a delicious greek orzo salad ill be posting soon! I roasted this recipe in the oven because the weather outside was not great, so to keep the skin nice and crispy I greased a metal cooling rack placed it on a cookie sheet and cooked the chicken on top of the rack. Spraying the rack is very important to prevent the skin from sticking.

Marinating overnight is the best way for the chicken to be full of flavour but if you are pressed for time you can marinate anywhere from at least 2 hours to overnight, whatever your schedule has room for. You could also use this marinade on different cuts of the chicken such has thighs or breast, even pork tenderloin would taste delicious with this marinade.

Roasted Greek Drumsticks


Ingredients:


- 2 lbs chicken drumstick

- 2 tablespoons olive oil

- juice of 1 lemon, about 1/4 cup

- 1 tablespoon dried oregano

- 1/2 tablespoon dried basil

- 1 tablespoon rosemary leaves

- 1 tablespoon garlic powder

- 1/2 tablespoon onion powder

- 1/2 teaspoon salt

- 1/4 teaspoon black pepper


Instructions:

  1. Combine all marinade ingredients in a bowl and whisk until combined, pour marinade over chicken in a glass container and let marinate for at least 2 hours, overnight is best.

  2. Preheat oven to 350F, spray wired rack with cooking spray then place on a cookie sheet covered in tin foil. Place drumsticks onto wire rack and place in preheated oven. Bake at 350F for 30 minutes, increase heat to 400F and cook for another 30-35 minutes, turning drumsticks every 10 minutes, this helps roast the chicken on both sides and gets the skin nice and crispy.
