Slow Cooker Beef Dip

Who doesn’t love beef dip? Fresh brioche buns, garlic mushrooms, Swiss cheese and salty au jus pair with a slow cooked beef roast makes delicious sandwich.

The weather lately has been windy, cloudy and rainy so this weekend I decided to bring out the slow cooker and make beef dip. I had some brioche burger buns in the freezer so I used homemade instead of store bought. If you don’t have time to make buns store or bakery bought will work just fine.
This recipe is very easy to make and the best part about using a slow cooker is you can go about your day while your supper is cooking.


Slow Cooker Beef Dip
Ingredients:
2 pound beef roast, boneless
1 1/2 cup beef broth
3 packets of beef bouillon
1/2 cup chopped onion
2 tablespoons garlic, minced
2 tablespoons Worcestershire sauce
1 tablespoon Dijon mustard
2 tablespoons red wine
3 cups mushrooms, sliced. 1 teaspoon minced garlic and 1 tablespoon butter
6 slices of Swiss Cheese
6 brioche burger buns, sliced and toasted in oven
Instructions:
Place beef roast into the slow cooker, add broth, bouillo, Worcestershire sauce, onions, garlic, Dijon mustard and red wine. Set to high and cook for 2 hours.
After 2 hours reduce the cooker to low and continue to cook for about 5 hours
When beef is almost ready sauté mushrooms with butter and garlic until soft.
Preheat oven to broil, place sliced and buttered buns onto baking sheet and toast until golden brown.
Remove beef from pot and shred using two forks.
Place a large pile of beef on one side of each bun, top with a scoop of mushrooms and a slice of Swiss cheese.
Whisk remaining juices in slow cooker to help emulsify, ladle into small bowls for au jus.
