Strawberry Champagne Margaritas

What's Valentine's Day without a cocktail? And if you know me at all you know I love two things, margaritas and champagne. This margarita recipes uses pureed strawberries, fresh lime juice and just a splash of Champagne.

This recipe is quick, delicious and boozy! Pureed strawberries bring a fresh flavour while the champagne brings all the bubbles to a classic margarita. I've become a bit of a tequila snob and really enjoy a couple brands that are a little higher in price point. Casamigos is a favourite of mine and the blanco runs for about $60CAD for a bottle for this recipe I used the Reposado which runs for about $80CAD a bottle. I really want to try Teremana tequila which is Dwayne Johnson brand. Spending a little extra on tequila is so worth it!

Making the heart shaped strawberry garnish was super easy, my sister in law had a small heart shaped cookie cutter and it made the job quick! The rimmer which is usually salt for a margarita is a mixture of Himalayan pink sea salt and pink sugar to give it that Valentines Day twist.

Strawberry Champagne Margaritas

makes 2


Ingredients:

- 3 ounces tequila

- 1 1/2 ounces triple sec

- 5 tablespoons fresh lime juice

- 8 tablespoons strawberry puree

- Champagne to top each glass

- ice

- salt/sugar rimmer

- strawberry for garnish


Instructions:

  1. Rim each glass with salt/sugar mixture and place 5-6 ice cubes in glass, depending on their size.

  2. In a cocktail shaker combine; tequila, triple sec, lime juice, strawberry puree and 3 ice cubes. Shake vigorously for 45 second, then pour cocktail into each glass, leaving a little bit of room to top each margarita with a splash of champagne. Garnish with strawberry and serve!
