Triple Berry Salad

Berries and Balsamic, what more can I say? A match made in heaven. This salad is sure to be the perfect light lunch for your valentines or your galentines!

Valentine's Day is a day to treat yourself but that doesn't mean you have to eat unhealthy all day. This salad recipe is super indulgent but also filled with nutrients, berries loaded with antioxidants, greens packed with vitamins like vitamin A, C, K and several B, and a balsamic vinaigrette to bring it all together.

I always make my vinaigrette in a mason jar, its quick, easy and a great way to store it in your fridge. Goat cheese and pecans offer up a creamy and nutty flavour profile while the red onion brings just a little bit of heat to each bite. Your family will be asking for you to make this salad again and again!

Triple Berry Salad - serves 2

Ingredients :


For Balsamic maple vinaigrette:

- 1/2 cup olive oil

- 1/4 cup balsamic vinegar

- 1 tablespoon maple syrup

- 1 garlic clove, minced

- 1/2 tablespoon dijon mustard

- 1/4 teaspoon sea salt

- pinch black pepper


For Salad:

- 4 cups spinach

- 3 cups arugula

- 1/2 cup strawberries, sliced

- 1/2 cup raspberries and 1/2 cup blackberries

- 1/3 cup red onion, sliced thinly

- 1/3 cup pecans, toasted

- 1/4 cup goat cheese, crumbled


Instructions:

  1. Combine all vinaigrette ingredients in a mason jar with a lid and shake vigorously for about 30 seconds until completely emulsified.

  2. In a large bowl combine all salad ingredients and gently toss. Add 3-4 tablespoons of balsamic maple vinaigrette and toss until completely coated. You may add more vinaigrette depending on how you like true salads.
