Turkey Taco Bowl

I love Mexican food, it’s fresh and flavourful. This recipe is delicious and nutritious, it’s full of foods packed with nutrients. Avocados, tomatoes, black beans and ground turkey make this bowl one healthy treat.

There really aren’t too many steps in this recipe, a little cooking, a little chopping and then you have a meal.


Turkey Taco Bowls
Ingredients:
Makes 2 taco bowls
- 1 pound ground turkey
- 1 package taco seasoning
- 1/2 cup basmati rice (I used 10 minute rice)
- 1 cup water
- zest and juice of 1 lime
- 1 tablespoon cilantro, chopped
- 2 cup romaine lettuce, chopped
- 1/2cup black beans
- 1/2 cup corn
- 2/3 cup tomatoes, chopped
- 1/3 cup cheddar cheese, half white cheddar half medium cheddar
- 1 avocado, sliced
- green onion, lime wedges and cilantro for garnish - sour cream to top
Instructions:
1. In medium frying pan cook ground turkey until it is no longer pink, follow instructions on taco mix packet.
2. In medium sauce pan combine rice, water, lime zest/juice and cilantro. Bring to a boil then cover and reduce heat. Cook for 10 minutes and then remove from heat.
3. In a large bowl combine rice, turkey and remaining ingredients (lettuce, beans, tomatoes, corn, cheese and avocado) and top with sour cream. Garnish with cilantro, lime juice and green onion.

This is a great meal to cook for meal prep and is very filling. You can add peppers and jalapeños or substitute if you don’t like beans or corn. I like to consider the rice, lettuce and ground turkey as a blank canvas and you can add whatever you like to it!
What a successful Cinco de Mayo, social distancing doesn’t mean you can’t have a great little celebration on your own.
