Greek Orzo Salad

This is easily one of my favourite salads and goes so well with my roasted greek drumsticks recipe. The flavours you get in each bite hits the spot using ingredients like feta cheese, purple onion, arugula and dried cherries.

I first made this salad a few years ago when my cousin Laura came to the city for a visit, it was part of a full greek inspired feast and when I decided to make another greek feast for the blog I realized I couldn't forget to add this gem of a salad! Arugula is easily one of my favourite greens to play around with its fresh peppery taste adds so much to any salad or any dish you choose to include it in. Feta doesn't need any explanation its just delicious and so greek. This is basically the pasta salad of my dreams, using vinaigrette dressing makes this salad feel light and flavourful.




I usually make the salad ahead of time and let it marinade in the fridge for an hour or so then add the arugula right before serving. You can keep this salad in your fridge for up to a week if you have leftovers, you probably won't though!

Greek Orzo Salad
Ingredients
Dressing:
- 1/4 cup olive oil
- 1 garlic clove, minced
- 1 1/2 tablespoon dijon mustard
- juice of 1 lemon
- 1 teaspoon honey
- salt and pepper to taste
Salad:
- 4 cups orzo, cooked and cooled
- 1/3 cup purple onion, diced finely
- 1/3 cup dried cherries
- 1/4 cup crumbled feta
- 11/2 cups arugula
Instructions:
Cook, drain and cool orzo. I drizzle a little olive oil onto pasta to prevent any sticking while it cools.
Combine and whisk together all dressing ingredients and set aside.
In a medium sized bowl combine cooled orzo, purple onion, dried cherries and crumbled feta. Pour dressing over salad and mix until well coated, then stir in fresh arugula and serve. If not serving right away place salad in fridge and add arugula right before you serve it.
